Ingredients

  • 1 cup pecan nuts
  • ½ cup shredded coconut
  • 2 tablespoons whole flaxseed
  • ½ cup pumpkin seeds
  • ½ teaspoon ground Himalayan salt
  • 2 tablespoons coconut oil
  • A pinch of cinnamon
  • 2 tablespoons maple syrup or honey

Contains pecans.

Method

  1. Preheat the oven to 165°C fan-forced.
  2. Stir all the ingredients together until evenly combined. If the coconut oil is solid, gently melt it first so it mixes through.
  3. Spread the mixture in an even layer on a flat baking tray.
  4. Bake for approximately 15 minutes, until the nuts start to turn golden brown. Keep an eye on the tray towards the end of cooking.
  5. Allow to cool completely, then crumble into jars with secure lids.
